Ingredients

  • 900 g watermelon
  • 60 g sugar
  • 2 tbsp lime juice
  • mint leaves for finishing

Method

  1. Step 1

    Blend the watermelon with the sugar and lime juice until smooth.

  2. Step 2

    Strain the mixture into a shallow freezer-safe tray.

  3. Step 3

    Freeze for 45 minutes, then scrape the icy edges into the center with a fork.

  4. Step 4

    Repeat the scraping every 30 minutes until the whole tray is filled with fluffy ice crystals.

  5. Step 5

    Spoon the granita into cold glasses.

  6. Step 6

    Finish with mint leaves and serve immediately.
