S'mores Cookie Bars

Ingredients
- 170 g unsalted butter
- 180 g brown sugar
- 2 eggs
- 240 g plain flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 120 g chocolate chunks
- 120 g mini marshmallows
- 8 digestive biscuits
Method
Step 1
Heat the oven to 175°C and line a square baking tin with baking paper.
Step 2
Melt the butter, then whisk in the sugar until glossy.
Step 3
Whisk in the eggs one at a time until the batter looks thick and shiny.
Step 4
Fold in the flour and the salt just until the batter comes together.
Step 5
Spread the batter in the tin and scatter over the biscuits, chocolate, and marshmallows.
Step 6
Bake for 24 to 32 minutes until the edges are set and the center still looks slightly fudgy.
Step 7
Cool the slab completely before lifting it out and cutting it into bars.
