Ingredients
- 170 g unsalted butter
- 160 g brown sugar
- 80 g sugar
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
- 240 g plain flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 180 g dark chocolate chips

Method
Step 1
Heat the oven to 180°C and line two baking trays with baking paper.
Step 2
Cook the butter in a saucepan for 3 to 4 minutes until it smells nutty and turns amber, then let it cool for 10 minutes.
Step 3
Whisk the browned butter, the sugars, the egg, the extra yolk, and the vanilla until smooth.
Step 4
Whisk the flour, the baking soda, and the salt in a second bowl.
Step 5
Fold the dry ingredients into the butter mixture just until a soft dough forms.
Step 6
Fold in the dark chocolate, then scoop the dough into even mounds and space them well apart on the trays.
Step 7
Bake for 10 to 14 minutes until the edges are set and the centers still look slightly soft.
Step 8
Cool the cookies on the tray for 5 minutes, then transfer them to a rack to cool completely.
