  • 350 ml coconut milk
  • 45 g chia seeds
  • 2 tbsp maple syrup
  • 180 g mango puree
  • diced mango for topping

Method

  1. Step 1

    Whisk the coconut milk, mango puree, and maple syrup in a bowl until smooth.

  2. Step 2

    Stir in the chia seeds until they are evenly distributed.

  3. Step 3

    Leave the bowl for 10 minutes, then whisk again to break up any clumps.

  4. Step 4

    Cover the bowl and chill it for at least 4 hours or overnight.

  5. Step 5

    Stir the pudding once more until creamy.

  6. Step 6

    Spoon it into glasses and top with the diced mango before serving.
