Ingredients
- 230 g lean turkey mince
- 180 g black beans
- 1 large bell pepper
- 120 g corn
- 1 small red onion
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp tomato paste
- 80 g Greek yogurt
- 2 tbsp chopped cilantro
Method
Step 1
Measure out the 230 g lean turkey mince and loosen it with your hands so it cooks evenly.
Step 2
Slice the bell pepper into thin strips (1 large), drain the corn (120 g), and slice the red onion thinly (1 small).
Step 3
Heat a pot, add a little oil, and cook the lean turkey mince for a few minutes until it starts to brown.
Step 4
Add the vegetables that need the longest cooking time first, then stir in the ingredients for the tomato chili base and enough water or stock to create a broth.
Step 5
Simmer the pot gently until the vegetables are tender and the lean turkey mince is fully cooked. If you are using quick vegetables like spinach, add them for the last 1 to 2 minutes only.
Step 6
Stir in the black beans and simmer for another 2 minutes so they heat through without breaking apart.
Step 7
Taste and adjust with salt, lemon, or lime as needed, then serve and finish with Greek yogurt and cilantro.
