Spicy Shrimp Rosé Protein Pasta

Ingredients
- 220 g shrimp
- 180 g high-protein pasta
- 150 g cherry tomatoes
- 80 g spinach
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp chili flakes
- 120 g Greek yogurt
- 1 garlic clove
- 2 tbsp tomato paste
- 30 g parmesan
- 1 tbsp torn basil

Method
Step 1
Boil the 180 g high-protein pasta in well-salted water until just tender, then reserve a little pasta water before draining.
Step 2
Peel and devein the 220 g shrimp if needed, then pat them dry so they sear instead of steam.
Step 3
Halve the cherry tomatoes (150 g), and roughly chop the spinach (80 g).
Step 4
Season the shrimp with 1 tsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp chili flakes.
Step 5
Cook the shrimp in a hot pan for 1 to 2 minutes per side until pink. Transfer them to a plate right away so they do not overcook.
Step 6
In the same pan, cook the vegetables for 2 to 4 minutes, then stir in the ingredients for the spicy rosé sauce with tomato paste, garlic, and Greek yogurt. Use a splash of the cooking water to loosen the sauce if needed.
Step 7
Add the drained high-protein pasta, return the cooked shrimp to the pan, and toss everything together for 1 minute so the sauce coats every piece.
Step 8
Taste and adjust the seasoning, then plate the pasta and finish with basil and chili flakes.
