Ingredients
- 4 slices smoked salmon
- 2 sourdough bread
- 1/2 large cucumber
- 1 large tomato
- 1 small red onion
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 100 g Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp chopped dill
- black pepper to taste
- 1 tbsp capers
Method
Step 1
Mix the Greek yogurt, lemon, dill, and black pepper to make the spread.
Step 2
Toast the 2 slices of sourdough bread until crisp at the edges but still tender in the center.
Step 3
Slice the cucumber, tomato, and red onion thinly so the toppings sit neatly on the toast.
Step 4
Spread the yogurt mixture over the warm toast in an even layer.
Step 5
Lay the salmon over the top, then add the sliced vegetables.
Step 6
Finish with capers and dill and serve right away.
