Grilled Chicken Peach Salad

Ingredients
- 220 g chicken breast
- 120 g mixed greens
- 1/2 large cucumber
- 150 g cherry tomatoes
- 1/2 avocado
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 1 tbsp olive oil
- 1 peach peach slices
- 30 g feta
Method
Step 1
Cut the 220 g chicken breast into bite-sized pieces and pat the pieces dry with paper towels.
Step 2
Season the chicken breast with 1 tsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, then cook it in a hot pan until browned and cooked through. Let it rest while you build the salad.
Step 3
Wash and dry the mixed greens (120 g), dice the cucumber (1/2 large), halve the cherry tomatoes (150 g), and slice the avocado (1/2).
Step 4
In a jar or bowl, whisk together the ingredients for the balsamic honey dressing until smooth and glossy.
Step 5
Add the greens and prepared vegetables to a large bowl and toss lightly with half of the dressing.
Step 6
Slice or flake the cooked chicken breast and place it on top of the salad. Add any warm ingredients last so the greens stay fresh.
Step 7
Spoon over the remaining dressing, add peach slices and feta, and serve right away.
