Ingredients
- 220 g plain flour
- 30 g icing sugar
- 1/4 tsp salt
- 120 g cold unsalted butter
- 1 egg yolk
- 2 to 3 tbsp cold water
- 220 g dark chocolate
- 220 ml double cream
- 20 g butter
- 1 pinch sea salt
Method
Step 1
Heat the oven to 180°C and grease a 23 cm tart tin.
Step 2
Rub the flour, icing sugar, salt, and cold butter together until crumbly, then mix in the egg yolk and enough cold water to bring the dough together.
Step 3
Roll the dough out, line the tart tin, prick the base with a fork, and chill it for 15 minutes.
Step 4
Bake the tart case for 18 to 22 minutes until lightly golden, then cool it completely.
Step 5
Put the chopped chocolate in a heatproof bowl.
Step 6
Heat the cream until just steaming, pour it over the chocolate, and leave it for 1 minute.
Step 7
Stir until smooth, then mix in the butter and sea salt.
Step 8
Pour the ganache into the cooled tart case, chill for 2 hours, and slice to serve.
