Ingredients

  • 230 g lean turkey mince
  • 170 g brown rice
  • 120 g corn
  • 150 g black beans
  • 1/2 avocado
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 120 g Greek yogurt
  • 1 tsp chipotle paste
  • 1 tbsp lime juice
  • 2 tbsp chopped cilantro
  • 2 tbsp pickled onion

Method

  1. Step 1

    Cook the 170 g brown rice according to the package directions, then let it steam for 5 minutes before fluffing.

  2. Step 2

    Measure out the 230 g lean turkey mince and loosen it with your hands so it cooks evenly.

  3. Step 3

    Drain the corn (120 g), drain and rinse the black beans (150 g), and slice the avocado (1/2).

  4. Step 4

    Put the lean turkey mince in a bowl, add 1 tsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, and toss until every piece is lightly coated.

  5. Step 5

    Cook the turkey in a hot pan for 5 to 6 minutes, breaking it up with a spatula until no pink remains.

  6. Step 6

    In a small bowl, stir together the ingredients for the chipotle lime yogurt sauce until smooth and balanced. Add a splash of water if you want it thinner.

  7. Step 7

    Quickly cook the sturdier vegetables in the same pan for 2 to 4 minutes so they stay bright and slightly crisp, then keep the raw vegetables for topping.

  8. Step 8

    Build the bowl with the brown rice, add the cooked lean turkey mince, arrange the vegetables around it, drizzle over the sauce, and finish with cilantro and pickled onion.
