Ingredients
- 220 g chicken sausage
- 240 g sweet potatoes
- 1 large bell pepper
- 1 small red onion
- 80 g spinach
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 2 tbsp chopped parsley
- to serve avocado
Method
Step 1
Cut the 240 g sweet potatoes into small cubes, toss them with oil and salt, and roast them until tender at the edges.
Step 2
Slice the 220 g chicken sausage into thick coins so the cut sides can brown nicely.
Step 3
Slice the bell pepper into thin strips (1 large), slice the red onion thinly (1 small), and roughly chop the spinach (80 g).
Step 4
Brown the chicken sausage in a hot skillet until the edges are golden.
Step 5
Add the vegetables and cook them for 3 to 4 minutes until softened.
Step 6
Add the cooked sweet potatoes back to the skillet and toss everything together.
Step 7
Finish with parsley and avocado and serve while hot.
