Ingredients
- 180 g chicken breast
- 1 burger buns
- 1 large tomato
- 80 g spinach
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 120 g Greek yogurt
- 1 tsp Dijon mustard
- 1 tsp honey
- to serve cottage cheese

Method
Step 1
Cook the chicken until fully done, then slice it thinly or shred it.
Step 2
Mix the cottage cheese with mustard, black pepper, and a pinch of salt.
Step 3
Toast the cut sides of the 1 burger bun until lightly golden.
Step 4
Spread the cottage cheese mixture on both cut sides of the bun.
Step 5
Layer on the chicken, tomato, and spinach.
Step 6
Close the sandwich and heat it in a pan for 1 to 2 minutes per side until warmed through and lightly crisp.
