Ingredients
- 220 g extra-firm tofu cubed
- 160 g cooked rice noodles
- 120 g broccoli slaw
- 80 g bell pepper sliced
- 1 tsp olive oil
- 1 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tsp lime juice
- 1 tsp chili flakes
- 1 tbsp chopped peanuts
Method
Step 1
Pat tofu dry and season with salt and pepper.
Step 2
Sear tofu in olive oil for 4 minutes until lightly crisp.
Step 3
Add broccoli slaw and bell pepper and stir-fry 2 minutes.
Step 4
Whisk peanut butter, soy sauce, lime juice, and a splash of water.
Step 5
Add noodles and sauce to the pan and toss until glossy.
Step 6
Finish with chili flakes and chopped peanuts.
