Ingredients
- 240 g shrimp peeled
- 160 g cooked rice
- 1 egg
- 100 g peas and carrots
- 1 tsp olive oil
- 1 garlic clove
- 1 tsp grated ginger
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 spring onion sliced
Method
Step 1
Pat the shrimp dry and season lightly with salt and pepper.
Step 2
Scramble the egg in a hot non-stick pan, then set aside.
Step 3
Add olive oil, garlic, and ginger, then cook shrimp for 2 minutes per side.
Step 4
Add peas and carrots, then stir-fry 1 minute.
Step 5
Add rice, soy sauce, sesame oil, and scrambled egg and toss for 2 minutes.
Step 6
Top with sliced spring onion and serve.
