  • 220 g cod fillet chunks
  • 140 g cooked couscous
  • 120 g zucchini diced
  • 80 g cherry tomatoes
  • 1 tsp olive oil
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp parsley chopped
  • 2 tbsp Greek yogurt

Method

  1. Step 1

    Season cod with salt, pepper, and lemon zest.

  2. Step 2

    Sear cod in olive oil for about 2 minutes per side, then set aside.

  3. Step 3

    Cook zucchini and cherry tomatoes with garlic for 2 minutes.

  4. Step 4

    Add couscous and lemon juice and toss to heat through.

  5. Step 5

    Return cod to the pan and warm gently for 1 minute.

  6. Step 6

    Top with parsley and serve with Greek yogurt.
