Ingredients

  • 200 g cooked chicken breast sliced
  • 2 medium whole-wheat tortillas
  • 60 g light cheddar
  • 120 g bell peppers sliced
  • 60 g onion sliced
  • 1 tsp olive oil
  • 1 tsp fajita seasoning
  • 2 tbsp Greek yogurt
  • 2 tbsp salsa
  • 1/2 tsp salt

Method

  1. Step 1

    Cook peppers and onions in olive oil with fajita seasoning for 3 minutes.

  2. Step 2

    Add sliced chicken and warm through for 1 minute.

  3. Step 3

    Place one tortilla in a pan and add half the cheese.

  4. Step 4

    Spread chicken-fajita mix evenly, then add remaining cheese and second tortilla.

  5. Step 5

    Cook 2 minutes per side until golden and melty.

  6. Step 6

    Slice and serve with yogurt and salsa.
