15-Minute Chicken Fajita Quesadilla

Ingredients
- 200 g cooked chicken breast sliced
- 2 medium whole-wheat tortillas
- 60 g light cheddar
- 120 g bell peppers sliced
- 60 g onion sliced
- 1 tsp olive oil
- 1 tsp fajita seasoning
- 2 tbsp Greek yogurt
- 2 tbsp salsa
- 1/2 tsp salt
Method
Step 1
Cook peppers and onions in olive oil with fajita seasoning for 3 minutes.
Step 2
Add sliced chicken and warm through for 1 minute.
Step 3
Place one tortilla in a pan and add half the cheese.
Step 4
Spread chicken-fajita mix evenly, then add remaining cheese and second tortilla.
Step 5
Cook 2 minutes per side until golden and melty.
Step 6
Slice and serve with yogurt and salsa.
