Ingredients

  • 120 ml water
  • 50 g butter
  • 75 g plain flour
  • 2 eggs
  • 200 ml cream
  • 1 tbsp sugar
  • 150 g strawberries

Method

  1. Step 1

    Heat the oven to 200°C and line a baking tray with baking paper.

  2. Step 2

    Bring the water and butter to a boil in a saucepan, then add the flour and stir until a smooth dough forms.

  3. Step 3

    Cool the dough for 5 minutes, then beat in the eggs one at a time until glossy.

  4. Step 4

    Pipe or spoon mounds of choux pastry onto the tray.

  5. Step 5

    Bake for 20 to 25 minutes until puffed and golden, then cool completely.

    Whip the cream with the sugar until soft peaks form and fold in the chopped strawberries.

    Split the cooled puffs, fill them with the strawberry cream, and serve.
