Spicy Sausage Tomato Rigatoni

Ingredients
- 340 g rigatoni
- 340 g Italian chicken sausage, sliced
- 15 ml olive oil
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 240 ml marinara
- 20 g grated parmesan and 1 ml red pepper flakes
- salt
- black pepper
Method
Step 1
Bring a large pot of salted water to a boil and cook the rigatoni until just tender.
Step 2
While the pasta cooks, heat the olive oil in a large skillet over medium heat and cook 340 g italian chicken sausage, sliced for 4 to 5 minutes until hot and lightly browned.
Step 3
Add the garlic and cook it for 30 seconds until fragrant.
Step 4
Stir in 1 red bell pepper, sliced and cook it for 2 minutes until the vegetables soften.
Step 5
Add 240 ml marinara and simmer it for 2 minutes.
Step 6
Drain the pasta, add it to the skillet, and toss it with 20 g grated parmesan and 1 ml red pepper flakes until glossy and coated.
Step 7
Taste the pasta, adjust the seasoning, and divide it between bowls.
