- 395 g extra-firm tofu, cubed
- 225 g rice noodles
- 95 g shredded carrots and 170 g snap peas
- 45 ml peanut sauce
- 2 sliced green onions
- 15 ml olive oil
Method
Step 1
Heat the olive oil in a large skillet over medium heat and cook 95 g shredded carrots and 170 g snap peas for 2 minutes.
Step 2
Add 395 g extra-firm tofu, cubed and stir it through the pan until it is hot and coated.
Step 3
Stir in 45 ml peanut sauce and let it simmer for 2 minutes.
Step 4
Add 225 g rice noodles and toss everything until combined.
Step 5
Cook the skillet for 1 to 2 minutes so the flavors settle into the pan.
Step 6
Finish the skillet with 2 sliced green onions.
Step 7
Spoon the mixture into bowls or onto plates and serve it warm.
