Smoky Chipotle Tofu Rice Noodles
Cook 250 g rice noodles according to the package directions, drain it, and keep it ready.

Ingredients
- 400 g extra-firm tofu, cubed
- 250 g rice noodles
- 15 ml oil
- 150 g roasted peppers, sliced
- 150 g spinach
- 60 ml smoky tomato-chipotle sauce
- 1 avocado, diced
- salt
- black pepper
Method
Step 1
Cook 250 g rice noodles according to the package directions, drain it, and keep it ready.
Step 2
Season the tofu with salt and black pepper.
Step 3
Heat 15 ml oil in a large skillet over medium-high heat and cook the tofu for 6 to 8 minutes until golden on most sides.
Step 4
Add 150 g roasted peppers, sliced and 150 g spinach and cook them for 2 minutes until just tender.
Step 5
Stir in 60 ml smoky tomato-chipotle sauce and let it bubble for 1 minute.
Step 6
Add the cooked rice noodles and toss everything together until coated.
Step 7
Finish the noodles with 1 avocado, diced and serve them hot.
