Ingredients

  • 400 ml cream
  • 250 ml milk
  • 90 g sugar
  • 3 egg yolks
  • 180 g caramel sauce
  • flaky salt

Method

  1. Step 1

    Warm the milk, cream, and sugar in a saucepan until steaming but not boiling.

  2. Step 2

    Whisk the egg yolks in a bowl, then pour in some of the hot cream while whisking constantly.

  3. Step 3

    Return everything to the saucepan and cook over low heat until the custard thickens enough to coat the back of a spoon.

  4. Step 4

    Stir in the caramel sauce and the flaky salt until smooth.

  5. Step 5

    Strain the custard into a bowl and chill it until completely cold.

  6. Step 6

    Churn the cold custard in an ice cream maker until thick and creamy.

  7. Step 7

    Transfer the ice cream to a freezer container.

  8. Step 8

    Freeze for 3 to 4 hours before scooping.
