Roasted Pepper Turkey Couscous Bowls

Ingredients
- 450 g lean ground turkey
- 300 g couscous
- 15 ml olive oil
- 5 ml smoked paprika
- 70 g sliced roasted red peppers
- 20 g baby spinach
- 30 ml lemon juice
- 40 g crumbled feta
- 70 g diced cucumber
- 3 g chopped parsley

- black pepper
Method
Step 1
Cook 300 g couscous according to the package directions and fluff it with a fork.
Step 2
Heat 15 ml olive oil in a skillet over medium heat and cook 450 g lean ground turkey for 6 to 7 minutes until browned.
Step 3
Season the turkey with salt, black pepper, and 5 ml smoked paprika.
Step 4
Add 70 g sliced roasted red peppers and 20 g baby spinach and cook for 1 to 2 minutes.
Step 5
Stir in 30 ml lemon juice so the turkey mixture stays juicy.
Step 6
Divide the couscous between bowls and top it with the turkey mixture, 40 g crumbled feta, and 70 g diced cucumber.
Step 7
Finish with 3 g chopped parsley and serve right away.
