Ingredients

  • 180 g meringue pieces
  • 250 ml whipped cream
  • 180 g raspberries
  • 1 tbsp icing sugar

Method

  1. Step 1

    Whip the cream with the icing sugar until it reaches soft peaks.

  2. Step 2

    Crush the meringue into bite-size pieces.

  3. Step 3

    Fold half of the raspberries lightly into the cream so you keep visible streaks.

  4. Step 4

    Layer the raspberry cream and meringue pieces into serving glasses.

  5. Step 5

    Top with the remaining raspberries and extra meringue.

  6. Step 6

    Serve straight away so the meringue stays crisp.
