Raspberry Almond Bars

Ingredients

  • 220 g plain flour
  • 150 g unsalted butter
  • 140 g sugar
  • 1 egg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 160 g raspberry jam
  • 60 g sliced almonds

Method

  1. Step 1

    Heat the oven to 175°C and line a square baking tin with baking paper.

  2. Step 2

    Rub the butter into the flour, sugar, and salt until the mixture looks like damp crumbs.

  3. Step 3

    Press two thirds of the dough into the tin, spread the raspberry jam over it, and sprinkle over the sliced almonds.

  4. Step 4

    Crumble the remaining dough over the top.

  5. Step 5

    Bake for 30 to 38 minutes until the top is golden and the filling is bubbling at the edges.

  6. Step 6

    Cool completely in the tin before cutting into bars.
