Ingredients
- 700 g pineapple chunks
- 90 g sugar
- 1 tbsp lime juice
- 1 tbsp cornstarch
- 150 g rolled oats
- 90 g flour
- 90 g butter
- 50 g desiccated coconut
Method
Step 1
Heat the oven to 190°C and butter a baking dish.
Step 2
Toss the pineapple with the sugar and cornstarch, then spread it in the dish.
Step 3
Rub the butter into the oats, flour, brown sugar, and coconut until chunky crumbs form.
Step 4
Scatter the topping over the pineapple.
Step 5
Bake for 30 to 40 minutes until the top is golden and the fruit is bubbling.
Step 6
Rest for 15 minutes before serving.
