Peanut Lime Lentil Rice Noodles
Cook 250 g rice noodles according to the package directions, drain it, and keep it ready.

Ingredients
- 350 g cooked lentils
- 250 g rice noodles
- 15 ml oil
- 150 g cherry tomatoes, halved
- 1 red onion, sliced thin
- 60 ml peanut sauce and 15 ml lime juice
- 15 g chopped peanuts and 15 ml chopped coriander
- salt
- black pepper
Method
Step 1
Cook 250 g rice noodles according to the package directions, drain it, and keep it ready.
Step 2
Season the lentils with salt and black pepper.
Step 3
Heat 15 ml oil in a large skillet over medium-high heat and cook the lentils for 2 to 3 minutes until hot.
Step 4
Add 150 g cherry tomatoes, halved and 1 red onion, sliced thin and cook them for 2 minutes until just tender.
Step 5
Stir in 60 ml peanut sauce and 15 ml lime juice and let it bubble for 1 minute.
Step 6
Add the cooked rice noodles and toss everything together until coated.
Step 7
Finish the noodles with 15 g chopped peanuts and 15 ml chopped coriander and serve them hot.
