Ingredients

  • 170 g unsalted butter
  • 180 g brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tsp espresso powder
  • 220 g plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 90 g chopped walnuts
  • 100 g white chocolate chunks

Method

  1. Step 1

    Heat the oven to 175°C and line a square baking tin with baking paper.

    Melt the butter, then whisk in the brown sugar until smooth.

  3. Step 3

    Whisk in the eggs and the espresso until combined.

  4. Step 4

    Fold in the flour, baking powder, and salt.

  5. Step 5

    Fold in the walnuts, scrape the batter into the tin, and smooth the top.

  6. Step 6

    Bake for 24 to 30 minutes until the top is lightly golden and the middle is just set.

    Cool fully before slicing into squares.
