Miso Ginger Lentil Penne
Bring a large pot of salted water to a boil and cook 250 g penne until just tender.

Ingredients
- 350 g cooked lentils
- 250 g penne
- 15 ml olive oil
- 150 g roasted peppers, sliced
- 150 g spinach
- 30 g white miso and 30 ml water and 60 ml pasta water
- 2 sliced spring onions
- salt
- black pepper
Method
Step 1
Bring a large pot of salted water to a boil and cook 250 g penne until just tender.
Step 2
Heat 15 ml olive oil in a large skillet over medium heat and cook 150 g roasted peppers, sliced for 2 to 3 minutes.
Step 3
Add 350 g cooked lentils and 150 g spinach and cook them for 3 minutes until hot and tender.
Step 4
Stir in 30 g white miso and 30 ml water and 60 ml pasta water and let it simmer for 2 minutes.
Step 5
Drain the pasta and add it to the skillet.
Step 6
Toss everything together until the sauce coats the pasta evenly.
Step 7
Finish the pasta with 2 sliced spring onions and serve it hot.
