Light Pesto Lentil Stir-Fry

Ingredients
- 350 g cooked lentils
- 300 g cooked rice
- 15 ml olive oil
- 150 g green beans
- 150 g peas
- 30 ml basil pesto and 30 ml water
- 15 ml chopped basil
- salt
- black pepper
Method
Step 1
Cook 300 g cooked rice according to the package directions and keep it ready.
Step 2
Season the lentils with salt and black pepper.
Step 3
Heat 15 ml olive oil in a large skillet over medium-high heat and cook the lentils for 2 to 3 minutes until hot.
Step 4
Add 150 g green beans and 150 g peas and cook them for 2 minutes until crisp-tender.
Step 5
Stir in 30 ml basil pesto and 30 ml water and let it bubble for 1 minute.
Step 6
Add the cooked rice and toss everything together until coated.
Step 7
Finish the stir-fry with 15 ml chopped basil and serve it hot.
