Lemon Poppy Seed Cookies

Ingredients
- 200 g plain flour
- 90 ml olive oil
- 100 g sugar
- 15 ml lemon zest and 10 g poppy seeds
- 4 g baking powder
- 30 ml plant milk
- 1 g sea salt
Method
Step 1
Preheat the oven to 180°C and line a baking tray with baking paper.
Step 2
Add 200 g plain flour, 4 g baking powder, and 1 g sea salt to a mixing bowl and whisk them together.
Step 3
Add 90 ml olive oil, 100 g sugar, and 30 ml plant milk to a second bowl and stir until smooth.
Step 4
Pour the wet mixture into the dry mixture, add 15 ml lemon zest and 10 g poppy seeds, and fold until a soft cookie dough forms.
Step 5
Scoop the dough into 10 to 12 mounds on the tray and flatten them slightly with your hand.
Step 6
Bake the cookies for 10 to 12 minutes until the edges are set and the centers still look soft.
Step 7
Let the cookies cool on the tray for 10 minutes before moving them to a rack.
