Ingredients
- 350 g cooked lentils
- 8 small tortillas
- 15 ml oil
- 150 g roasted peppers, sliced
- 150 g spinach
- 30 ml olive oil and 15 ml lemon juice
- 15 ml chopped parsley and 15 ml chopped dill
- salt
- black pepper
Method
Step 1
Season the lentils with salt and black pepper.
Step 2
Heat 15 ml oil in a skillet over medium-high heat and cook the lentils for 2 to 3 minutes until hot.
Step 3
Add 150 g roasted peppers, sliced and 150 g spinach and cook them for 2 minutes until just tender.
Step 4
Stir in 30 ml olive oil and 15 ml lemon juice and cook for 1 minute until glossy.
Step 5
Warm the tortillas in a dry skillet for 20 seconds per side.
Step 6
Divide the filling between the tortillas.
Step 7
Finish the tacos with 15 ml chopped parsley and 15 ml chopped dill and serve them immediately.
