Herbed Yogurt Turkey Bowls
Cook 280 g couscous according to the package directions and keep it warm.

Ingredients
- 450 g lean ground turkey
- 280 g couscous
- 15 ml olive oil
- 150 g cucumber, diced
- 150 g cherry tomatoes, halved
- 120 g Greek yogurt with 10 ml lemon juice
- 15 ml chopped mint and 15 ml chopped parsley
- salt
- black pepper
Method
Step 1
Cook 280 g couscous according to the package directions and keep it warm.
Step 2
Season the turkey with salt and black pepper.
Step 3
Heat 15 ml olive oil in a skillet over medium-high heat and cook the turkey for 6 to 7 minutes until browned.
Step 4
Add 150 g cucumber, diced and 150 g cherry tomatoes, halved and cook them for 2 minutes until just tender.
Step 5
Stir in 120 g greek yogurt with 10 ml lemon juice and cook everything for 1 minute until glossy.
Step 6
Divide the cooked grain between bowls and top it with the skillet mixture.
Step 7
Finish each bowl with 15 ml chopped mint and 15 ml chopped parsley and serve right away.
