Herbed Yogurt Salmon Stir-Fry

Ingredients
- 450 g salmon, cut into chunks
- 220 g cooked farro
- 15 ml olive oil
- 150 g carrots, sliced thin
- 150 g baby spinach
- 120 g Greek yogurt with 10 ml lemon juice
- 15 ml chopped mint and 15 ml chopped parsley

Method
Step 1
Cook 220 g cooked farro according to the package directions and keep it ready.
Step 2
Season the salmon with salt and black pepper.
Step 3
Heat 15 ml olive oil in a large skillet over medium-high heat and cook the salmon for 6 to 8 minutes, turning gently, until opaque and cooked through.
Step 4
Add 150 g carrots, sliced thin and 150 g baby spinach and cook them for 2 minutes until crisp-tender.
Step 5
Stir in 120 g greek yogurt with 10 ml lemon juice and let it bubble for 1 minute.
Step 6
Add the cooked farro and toss everything together until coated.
Step 7
Finish the stir-fry with 15 ml chopped mint and 15 ml chopped parsley and serve it hot.
