Green Goddess Chicken Grain Bowls

Ingredients
- 450 g chicken thighs, cut into bite-sized pieces
- 300 g cooked farro or brown rice
- 15 ml olive oil
- 70 g sliced cucumber
- 85 g halved sugar snap peas
- 60 ml green goddess dressing
- 70 g avocado slices
- 20 g shredded lettuce
- 3 g chopped dill
- salt
- black pepper
Method
Step 1
Prepare 300 g cooked farro or brown rice and keep it warm.
Step 2
Season 450 g chicken thighs, cut into bite-sized pieces, with salt and black pepper.
Step 3
Heat 15 ml olive oil in a skillet over medium heat and cook the chicken for 6 to 7 minutes until browned and cooked through.
Step 4
Add 70 g sliced cucumber and 85 g halved sugar snap peas to the pan and cook them for 1 minute.
Step 5
Stir in 60 ml green goddess dressing so the chicken and vegetables are lightly coated.
Step 6
Divide the grains between bowls and top them with the chicken mixture, 70 g avocado slices, and 20 g shredded lettuce.
Step 7
Finish with 3 g chopped dill and serve the bowls immediately.
