Ingredients
- 400 g white beans, drained
- 150 g spinach
- 2 garlic cloves, minced
- 150 g cherry tomatoes, halved
- 300 g cooked quinoa
- 800 ml light stock
- 15 ml lime juice and 10 g grated ginger
- 15 ml chopped coriander
- 15 ml olive oil
- salt
- black pepper
Method
Step 1
Heat 15 ml olive oil in a soup pot over medium heat.
Step 2
Add 150 g spinach and cook it for 3 minutes until softened.
Step 3
Add 2 garlic cloves, minced, and stir for 30 seconds until fragrant.
Step 4
Add 400 g white beans, drained, 150 g cherry tomatoes, halved, 300 g cooked quinoa, 800 ml light stock, and 15 ml lime juice and 10 g grated ginger and bring the soup to a simmer.
Step 5
Cook the soup until the vegetables and starch are tender and the broth is flavorful.
Step 6
Taste the soup and season it with salt and black pepper.
Step 7
Ladle the soup into bowls and finish it with 15 ml chopped coriander.
