Coconut Curry Edamame Udon
Cook 250 g udon noodles according to the package directions, drain it, and keep it ready.

Ingredients
- 250 g shelled edamame
- 250 g udon noodles
- 15 ml oil
- 150 g pak choi, chopped
- 150 g carrots, shredded
- 150 ml light coconut milk and 20 g curry paste
- 15 ml chopped coriander
- salt
- black pepper
Method
Step 1
Cook 250 g udon noodles according to the package directions, drain it, and keep it ready.
Step 2
Season the edamame with salt and black pepper.
Step 3
Heat 15 ml oil in a large skillet over medium-high heat and cook the edamame for 3 to 4 minutes until hot.
Step 4
Add 150 g pak choi, chopped and 150 g carrots, shredded and cook them for 2 minutes until just tender.
Step 5
Stir in 150 ml light coconut milk and 20 g curry paste and let it bubble for 1 minute.
Step 6
Add the cooked udon and toss everything together until coated.
Step 7
Finish the noodles with 15 ml chopped coriander and serve them hot.
