- 1 can chickpeas, drained
- 320 g cooked rice
- 35 g chopped romaine and 140 g celery
- 80 ml buffalo sauce
- 30 ml ranch dressing
- 15 ml olive oil
Method
Step 1
Heat the olive oil in a large skillet over medium heat and cook 35 g chopped romaine and 140 g celery for 2 minutes.
Step 2
Add 1 can chickpeas, drained and stir it through the pan until it is hot and coated.
Step 3
Stir in 80 ml buffalo sauce and let it simmer for 2 minutes.
Step 4
Add 320 g cooked rice and toss everything until combined.
Step 5
Cook the skillet for 1 to 2 minutes so the flavors settle into the pan.
Step 6
Finish the skillet with 30 ml ranch dressing.
Step 7
Spoon the mixture into bowls or onto plates and serve it warm.
