Ingredients

  • 260 g plain flour
  • 60 g sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 80 g cold butter
  • 150 ml cream
  • 150 g blueberries
  • 100 g icing sugar
  • 2 tbsp milk

Method

    Heat the oven to 200°C and line a baking tray with baking paper.

    Whisk the flour, sugar, baking powder, and salt in a bowl.

    Rub in the cold butter until the mixture looks like coarse crumbs.

    Stir in the blueberries, then pour in the cream and mix just until a shaggy dough forms.

    Pat the dough into a thick round, cut it into wedges, and place them on the tray.

    Bake for 15 to 18 minutes until golden.

    Whisk the icing sugar with the milk, drizzle the glaze over the cooled scones, and let it set.
