Ingredients

  • 180 g plain flour
  • 80 g sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 120 ml milk
  • 45 g melted butter
  • zest of 2 lemons
  • 100 g icing sugar
  • 2 tbsp lemon juice

Method

  1. Step 1

    Heat the oven to 180°C and grease a donut pan.

  2. Step 2

    Whisk the flour, sugar, baking powder, and salt in a bowl.

  3. Step 3

    Whisk the egg, milk, melted butter, and lemon zest in a second bowl.

  4. Step 4

    Fold the wet ingredients into the dry ingredients just until combined.

  5. Step 5

    Pipe or spoon the batter into the donut pan and fill each cavity about three quarters full.

  6. Step 6

    Bake for 10 to 12 minutes until the donuts spring back when touched.

  7. Step 7

    Whisk the icing sugar with the lemon juice, dip the cooled donuts into the glaze, and let it set.
